Gluten Free Pistachio Cookies

These delicious and chewy gluten free cookies are chock full of pistachios and are so easy to make! If you’re a pistachio lover like me, then these cookies will absolutely hit the spot.

You can optionally choose to add chocolate chips and have a variation of the standard chocolate chip cookie. If you’re like me, I like to have the best of both worlds, so I make half the batter with just pistachios and half with pistachios and chocolate chips.

Let’s walk through how to make these easy, amazing cookies!

First you’ll need to grind your pistachios in a food processor. We want to be very careful not to over process here because once that happens, you’ll get pistachio butter (which is also equally delicious). Pulse the pistachios until finely ground, but before turning to nut butter! If you want to be extra cautious, you can work in stages by grinding the pistachios and sifting out the large chunks. Return the large chunks to the food processor and repeat.

Once your pistachios are finely ground, we’ll need to combine all of the dry ingredients (ground pistachios, gluten free flour, baking soda, and salt) in a medium bowl.

In another large bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk together until well combined.

Now we’ll need to add our egg and vanilla. Mix well.

Once that all comes together, we’ll add the dry ingredients. Fold together until just combined.

Once that comes together, we’ll add the chopped pistachios. Optionally, this is where you can add your chocolate chips as well (if using). Fold together gently.

Using a medium cookie scoop (about 2 tablespoons), portion out the dough in a baking sheet lined with parchment paper.

Refrigerate for at least 3 hours, but ideally overnight.

Once the dough has been chilled, preheat your oven to 350°F. Place dough balls on baking sheet lined with parchment paper 3-4 inches apart and bake for 13-15 minutes. Remove from the oven and let the cookies cool for 15-20 minutes, enjoy!

  5. Add the chopped pistachios and chocolate chips (if using) and fold gently until combined.

  6. Line a baking sheet with parchment paper. Using a medium cookie scoop (about 2 tablespoons), scoop dough onto baking sheet and let chill for at least 3 hours, but ideally overnight.

  7. Preheat over to 350°F. Place cookies 3-4 inches apart on a parchment lined baking sheet and bake for 13-15 minutes

  8. Remove from the oven and allow to cool for 15-20 minutes.
