Gluten Free Pistachio Loaf

Loaded with pistachios, fluffy, and soft, this gluten free pistachio loaf is so delicious and full of flavor. It goes perfectly with a cup of coffee in the morning, or even as an evening snack with a pad of butter on top. If you love pistachios, this is a must try!

This is a pretty simple recipe and can be whipped up fairly quickly. First you’ll need to grind some pistachios in a food processor. We want to be very careful not to over process here because once that happens, you’ll get pistachio butter (which is also equally delicious). Pulse the pistachios until finely ground, but before turning to nut butter! If you want to be extra cautious, you can work in stages by grinding the pistachios and sifting out the large chunks. Return the large chunks to the food processor and repeat.

Once your pistachios are finely ground, we’ll need to combine all of the dry ingredients (ground pistachios, gluten free flour, baking powder, and salt) in a medium bowl. Set this aside.

In a stand mixer fitted with the paddle attachment, cream together the butter and sugar until light and fluffy. Scrape down the sides of the bowl and add your eggs and vanilla. Mix well.

Add half of your dry ingredients and mix until just combined. Add the milk and the rest of the dry ingredients and beat until just combined. Do not overmix at this stage.

Pour the batter into a prepared loaf pan lined with parchment paper.

Bake at 350°F for about 55 minutes or until a toothpick inserted into the center comes out clean.

Let cool for about 15-20 minutes. Then slice and enjoy!
