Gluten Free Ube Sugar Cookies

These gluten free ube sugar cookies are so soft and slightly chewy, saturated with delicious ube flavor. These are fairly simple to make and so delicious!

A couple of products you’ll need that you may not necessarily have in your pantry are ube extractube jam, and ube powder. You can find these at your local international grocery store or through Amazon. 

To get started, prepare a parchment lined baking sheet and set aside. Preheat the oven to 350°F.

Cream the room temperature butter and granulated sugar in a large bowl fitted with a stand mixer or a hand mixer until light and fluffy. Add the vanilla and eggs and mix until fully combined.

Add the ube extract and ube jam (halaya) to the bowl and mix until well combined.

The batter will turn a beautiful purple color.

Add the dry ingredients (gluten free flour, baking powder, baking soda, salt, and ube powder) and mix until just incorporated.

You batter should now be stiff enough to roll into balls.

Taking a cookie scoop, portion out the dough and roll in granulated sugar. I mixed in some ube powder with my granulated sugar, but this is optional.

Place the dough at least 2 inches apart on the prepared baking sheet.

Bake for 13-14 minutes and remove from the oven. Let the cookies cool completely.

Once cookies cool, enjoy!

  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

  3. Add vanilla and eggs to the butter mixture and mix until fully combined.

  4. Add the ube extract and ube jam to the mixing bowl and fully combine.

  5. In a medium bowl, combine the gluten free flour, baking powder. baking soda, salt, and ube powder. Whisk together well.

  6. Add the dry ingredients to the large mixing bowl and mix until just combined.

  7. Take a medium cookie scoop (I used a 3 Tbsp scoop), portion out the dough and roll in granulated sugar. 

  8. Place in the prepared parchment lined baking sheet  at least 2-3 inches apart. 

  9. Bake for 13 minutes and let cool. Enjoy!
